I was looking through the fridge yesterday and realised I had a punnet of blueberries and blackberries which I hadn't used. I looked through various recipes but nothing really appealed. As a result, I decided to make a Berrylicious pudding cake (my own recipe) - here is the result. It was lovely warm with heaps of custard!
Here is the recipe:
8oz self - raising flour
4oz butter/margarine
4oz sugar
2 eggs
small amount of milk
8oz blueberries
12 - 15 blackberries
Method
Rub in the butter and the flour until it resembles fine breadcrumbs. Add sugar and two eggs and mix well - add sufficient milk to make a moist mixture. Stir in blueberries and pour in to loaf tin. Spread blackberries on top of mixture and lightly press them in to mixture. Bake in oven at 200 degrees for approximately 30 minutes. Serve warm with custard!
